2. Fasting cake with quince jam
Who says that those who fast cannot enjoy a delicious sponge cake? Well, the quince jam cake recipe can be made without problems in this case too!
To begin with, margarine and mineral water will take the place of ingredients that are not consumed during fasting.
Then, for the filling, mix the quince jam with cinnamon, ground walnuts and, optionally, raisins. Make sure the ingredients are well incorporated.
For the dough, put soft margarine and vanilla sugar in a deep bowl and mix until you get a creamy texture. Add the flour, baking powder and a pinch of salt, then the oil. Gradually add the mineral water and mix well until you get a homogeneous dough. If necessary, add a little flour until the dough is no longer sticky and can be easily handled. Then, knead the dough until it becomes slightly elastic and can be stretched into thin sheets. It should not stick to the hands. Finally, divide it into three equal parts.
To assemble the cake, you will have to spread each piece of dough on a surface sprinkled with flour, until you get thin sheets the size of the tray. Place the first sheet of dough in a pan greased with margarine and lined with baking paper. You can use a fork to remove it. It's time to evenly spread half of the amount of quince jam over the dough sheet. Now, cover with the second sheet of stretched dough and fill with the rest of the quince jam. At the end, put the last sheet of thin dough.
Bake the cake in the preheated oven at 180°C for about 30-35 minutes, until it becomes golden. After the cake is baked, remove it from the oven and let it cool in the pan. If you want to add the glaze, you can melt the dark fasting chocolate and pour it over the baked sponge cake. You will get a delicious cake with quince jam!
