1. Lasagna with vegetables - method of preparation
There are a few simple steps you can follow if you want to get a flavorful vegetable lasagna, namely:
Start preparing the sauce by heating the olive oil in a pan over medium heat. Add the onion and garlic and saute until they turn golden. Next, put the chopped tomatoes, tomato paste and spices, and let everything boil on low heat for 20-30 minutes, stirring occasionally.
To prepare the filling, it is necessary to heat the olive oil in a large pan, and then add the onion and garlic and saute them over low heat until they become soft. After completing this step, dice the carrots, eggplant, zucchini and pepper, add them to the pan and cook for 5-7 minutes. Add the spinach and cook until soft, and then season with salt and pepper to taste.
Heat the oven to 180°C, and then grease a baking tray with cooking spray to prevent the preparation from sticking and facilitate later serving. Start assembling the vegetable lasagna by adding a thin layer of sauce, and then place the lasagna sheets on top of it until you cover the entire surface of the pan. Next, put half of the vegetable filling, half of the ricotta cheese and another layer of tomato sauce.
Repeat the previous step once more, and then cover with the last layer of lasagna sheets. Add mozzarella and parmesan on top of this, and then bake the dish in the oven for approximately 30-35 minutes or until it is golden. After it's ready, let the lasagna rest for 10 minutes, and then you can decorate it with fresh basil or oregano leaves and serve it with your loved ones.
