1. Appetizer muffins - preparation method
If you want to prepare a simple appetizer muffin recipe, ideal for both children and adults, follow these steps:
Start by preheating the oven to 180°C. Prepare the muffin tray, placing paper molds in each well to prevent sticking and facilitate easy removal of the preparation. If you want to have mini appetizer muffins, which are especially loved by children or which can be easily integrated into larger plates, use a smaller muffin tray, so that you get individual portions perfect for a quick and delicious snack.
Next, it's time to prepare the appetizer muffin batter. In a large bowl, sift the flour with the baking powder and add a pinch of salt and pepper. In another bowl, beat the eggs with the milk and oil until smooth. Pour the wet ingredients over the dry ingredients and mix gently until combined. Do not overmix or you will end up with a thick batter.
Grate the cheese finely to distribute evenly throughout the mixture and melt well during baking. Cut the pressed ham into small cubes and slice the olives into thin rounds for even distribution and a balanced taste. Chop the green onion and kapia pepper into small cubes to give the savory muffins color and texture, making sure the pieces are similar in size for even baking.
Add the previously chopped ingredients to the dough and mix gently. Use a spatula to mix in wide movements until all the ingredients are evenly distributed.
Using a spoon, pour the mixture into the muffin tins, making sure to fill them about three-quarters full. Once you have filled all the tins, tap the baking sheet lightly to remove any air bubbles and level the batter. Alternatively, you can make a muffin cake with the muffin mixture. Instead of pouring the mixture into individual tins, pour it into a single greased and floured pan or baking paper pan to make muffin cake muffins. This will give you a denser, more consistent texture, perfect for slicing and serving at parties or special events.
The muffins or the appetizer cake should be placed in the preheated oven. The baking time is approximately 20-25 minutes, or until they turn golden and rise. To check if they are baked, you can use the toothpick test: insert a toothpick into the middle of a muffin and, if it comes out clean or with a few crumbs stuck to it, then they are ready.
After baking, remove the pan from the oven and let the muffins cool in the pans for a few minutes. This will make it easier to remove the muffins from the pans. Then, you can transfer the muffins to a plate to cool before serving.
